Jean Lim is the owner of Pinklady Cheese Tart. They're known for their palm-sized Japanese baked cheese tarts and yogurt smoothies.

Jean, a Malaysian native, initially signed the lease on her bakery in February 2020 and planned to debut the business in April. However, due to the COVID-19 lockdown, she faced issues getting the renovations, suppliers, and health department inspections in time. At one point, she even created a GoFundMe fundraiser to help with rent and utilities.

When Pinklady Cheese Tart eventually opened in June after PAUSE ended in NYC, business was slow. Yet, Jean persevered, and now her crunchy twice-baked tarts filled with ooey gooey sweet cheesy goodness are a hit! She even expanded the flavor offerings to include blueberry, black sesame, ube, matcha, chocolate, and chocolate strawberry! These melt-in-your-mouth cheese tarts are the perfect dessert after a meal in Chinatown.
